La explotación de novillos Holstein se puede dirigir a segmentos que ofrecen oportunidad para la producción de leche o de carne. Actualmente alrededor del 13% de la carne de res que se produce en EUA (26.3 x 109 kg) proviene de ganado Holstein, el beneficio de su explotación depende de la oportunidad de identificar un nicho de mercado que se ajuste a los recursos disponibles de alimentación, mano de obra, instalaciones y opciones de comercialización. De una estrategia de manejo en novillos Holstein deben definirse una vez se conozca claramente el mercado objetivo y las características de calidad demandada.
