Novillos Angus (160) de 4 grupos de edades fueron asignados a 4 tratamientos (12m, 18m, 24m y 27m), coincidentes con las edades a faena: 12, 18, 24 y 27 meses y terminados simultáneamente a corral durante 120 días. La dieta se basó en grano de maíz partido, harinas de girasol y de soja, urea, heno de mijo y premezcla vitamínica y mineral. Se distribuyeron 40 animales por tratamiento en 10 corrales, en grupos de 4. Tres animales adicionales de cada grupo fueron faenados al inicio para determinar el peso (PRes) y rendimiento de res (RtoRes = PRes/PV) inicial. Al momento de la pesada inicial se hicieron determinaciones ecográficas de espesor de grasa dorsal (EGD) y área de ojo de bife (AOB). Se determinó el peso vivo (PV) individual y el consumo de materia seca (CMS) del animal promedio por corral. Se calcularon el aumento diario de peso vivo (ADPV) y de res (ADPR), el CMS relativo al PV (CMSPV) y los índices de conversión de CMS a ADPV (IC) y a ADPR (ICR). Finalizado el período de corral se procedió a la faena. Se determinó el PRes y el RtoRes. A las 48 horas se extrajo un bloque de bifes con hueso de la ½ res izquierda entre la 9na y 11ma costilla de 2 animales de cada corral para realizar determinaciones sobre la carne. Se determinaron: EGD, AOB, grasa intramuscular (GI), pérdidas por cocción (ppc), fuerza de corte por Warner-Bratzler (fcWB), pH y parámetros de color (L*, a*, b*). Con el dato de EGD y AOB inicial y final se calculó el incremento diario de cada variable (IncrEGD e IncrAOB). El PV final creció linealmente (p<0,001) en función de la edad. Las variables ADPV, ADPR, RtoRes, PRes, CMS, AOB y GI registraron una respuesta cuadrática (p<0,05). Los índices de conversión fueron inferiores (p<0,05) para 12m. El EGD y el IncrEGD resultaron mayores (p<0,05) para 27m. Las variables AOB y GI tuvieron la mayor diferencia entre 12m y 18m. No se detectaron efectos (p>0,05) en fcWB, ppc, pH y L*. La carne de 27m presentó menores valores de a* y b* (p<0,05).
